Ever want to join that barbecue down the street, but need a roll for that
perfectly grilled hot dog? Not a problem anymore! This roll is made in the top
half of a microwave-safe butter dish turned upside down. It is soft, slightly
moister, and slightly denser than the hamburger rolls in this book.
1 egg
2 teaspoons canola oil
1 tablespoon applesauce
teaspoon salt
2 tablespoons brown rice flour
¼ teaspoon baking powder
½ teaspoon sugar
Baked in:
microwave-safe butter dish, upside-down
1. In small bowl or cup, briefly beat egg until almost uniform in color.
2. Add remaining ingredients and mix well to combine.
3. Spray top of microwave-safe butter dish with nonstick cooking spray.
4. Pour batter into dish and tap base to level batter.
5. Microwave on high for 1½ minutes. Roll will rise and then settle.
6. Gently remove from dish and cool.
Hot Dog Roll
(cornstarch and cornmeal) MAKES 1 ROLL
This is a perfect hot dog roll—mild and tasting
much like a traditional hot dog roll.
1 egg
2 teaspoons canola oil

1 tablespoon cornstarch
1 tablespoon cornmeal
scant ¼ teaspoon baking powder
½ teaspoon sugar
Baked in:

(sorghum flour) MAKES 1 ROLL
Like the other hot dog rolls in this book, this roll is made

This is a lighter-textured hot dog roll.

2 tablespoons sorghum flour
scant ¼ teaspoon baking powder
¼ teaspoon sugar

Olive oil, garlic salt, and oregano are paired
to give this roll a nice Italian flavor.

1½ tablespoons applesauce
⅛ teaspoon garlic salt
2½ tablespoons brown rice flour
½ teaspoon baking powder
¼ teaspoon sugar
¼ teaspoon oregano or Italian seasoning
Baked in:
2-cup ramekin or other straight-sided microwave-safe bowl
1. In small bowl or cup, briefly beat egg until nearly uniform in color.
2. Add remaining ingredients and mix well to combine.
3. Spray 2-cup ramekin with nonstick cooking spray.
4. Pour batter into ramekin and tap base to level batter.
5. Microwave on high for 2 minutes. Roll will rise and then settle.
6. Gently remove from dish and cool.
Italian Roll
(sorghum flour) MAKES 1 ROLL
Like the brown rice version of the Italian Roll,
olive oil and oregano are used to flavor this roll.

1 tablespoon olive oil
1½ tablespoons applesauce
⅛ teaspoon garlic salt
2 tablespoons sorghum flour
½ teaspoon baking powder
¼ teaspoon sugar
¼ teaspoon oregano or Italian seasoning
Baked in:
2-cup ramekin or other straight-sided microwave-safe bowl

Onion Roll
(brown rice flour) MAKES 1 ROLL
This roll is soft and heavier in texture than
other rolls in this book. It is full of onion flavor!

1½ tablespoons minced onion
